Kasstengel Style - Crispy Cheese Snack

Need a quick snack? Make this recipe! ‘Kasstengel style': crispy cheese; crunchy, sweet, and savory. It looks like a kasstengel, but is much faster and easier to make! Perfect to share with friends and family, or enjoy it yourself!


Ingredients:

  • 9 pieces of plain bread
  • 100 ml of milk
  • 100 grams of Gouda, Our Seasonal Cheese
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 tablespoon of cornstarch, dissolved with 1 tablespoon of water
  • 75 grams of butter

Instructions:

  1. In a small saucepan, pour milk, cheese, sugar, butter and salt; mix well.
  2. Heat over low heat until dissolved and boiling.
  3. Pour the cornstarch liquid little by little while stirring quickly
  4. When it thickens, remove it from the heat. chill.
  5. Spread the cheese custard on the plain bread until it is evenly distributed
  6. Cut the bread in a rectangle shape or according to the taste
  7. Add grated gouda cheese; keep doing it until the bread runs out.
  8. Arrange the bread slices on a baking sheet that has been smeared with butter.
  9. Bake for 20–25 minutes at 180 degrees until brownish yellow. Enjoy!

Ingredients :

  • 3 eggs
  • ⅓ cup whipped cream/milk
  • Rosalie Herbs Butter
  • Black pepper goat cheese, crumbled (about 1 cup)
  • ½ cup chopped green onion, mostly green parts


Instructions :

  1. In a pot, break 3 eggs and add milk. Beat the eggs in a minute. Turn on the heat and stir it gently.
  2. Add salt and chopped leek to the pot. Last, add Black Pepper Goat Cheese for an extra kick. Stir again just for a minute and turn off the heat. Set aside.
  3. On a plate, add toast bread, then put the scrambled egg on the bread. Enjoy!

Instructions :

  1. Place cold whipping or heavy cream in a large bowl, whip to soft peaks.
  2. Set aside! Soften the Chevre Cheese, add sugar and natural vanilla , mix it well!
  3. Add Chevre Cheese mixture to the whipping cream
  4. Transfer into a container and then cover with plastic wrap and freeze for at least 6 hours or overnight
  5. Add an extra drizzle of honey over the top. Enjoy!






Black & White Puff Pastry with Apple

The flaky golden puff pastry, sweet palm sugar, and the tart flavor of the apple pair perfectly with the extra melty black & white cheese. It’s satisfying and pleasing to the taste buds.


Ingredients:

  • 1 sheet Puff Pastry
  • Flour
  • 20 gr Black & White
  • 1 Egg Yolk
  • 30 gr Apple
  • 1 tbsp Palm Sugar
  • Powdered Sugar as a topping


Instructions:

  1. Preheat the oven to 200°C.
  2. Take 1 sheet of puff pastry and coat it with flour.
  3. Place black & white cheese & apple slices on half of the puff pastry sheet.
  4. Fold the cake to cover. Press with a fork to seal.
  5. Place on a baking sheet.
  6. Whisk the egg yolks in a small bowl.
  7. Brush with egg yolk mixture.
  8. Bake for 15 minutes or until cookies are golden brown. Let stand for 20 minutes before serving.
  9. Garnish with powdered sugar and fresh veggies or edible flowers. Enjoy!

Ingredients (for one portion) :

  • Coriander & Romaine Lettuce
  • 1 Orange
  • 1 Cup Cranberries
  • 1 Cup Cashew Nuts - adds a crunch
  • 30 gr Chevre, Fresh Goat Cheese


Salad Dressings :

  • 2 tbsp Olive Oil
  • 11/2 tbsp Honey
  • ½ Lemon juice, freshly squeezed
  • Pinch of Salt & Black Pepper


Instructions :

  1. In a small bowl, combine the olive oil, honey, lemon juice, salt, and pepper
  2. Gradually whisk in the oil to make a salad dressing
  3. Put all but a large handful of the coriander & romaine lettuce in a large bowl
  4. Toss with most of the dressing. Add oranges, cranberries, & cashew nuts
  5. Continue tossing until well-coated
  6. Serve immediately topped with chevre goat cheese and cashew nuts.

Instructions:

  1. Place cold whipping or heavy cream in a large bowl, whip to soft peaks.

Ingredients:

  • 65 gr of Rosalie Black & White cheese
  • 80 gr of Rosalie cream cheese
  • 1 clove of garlic – minced
  • 1/2 tsp crushed black pepper
  • 1/2 lemon – about 2 tbsp of lemon juice
  • 1 tsp minced fresh parsley


Instructions: 

  1. Add minced garlic, cheese, cream cheese, crushed black pepper, lemon and black pepper to a bowl and whisk until completely combined.
  2. Scrape down the sides and give it a few more whisk
  3. Once the whipped black & white cheese is fully combined, stir in minced parsley and serve.
  4. Enjoy it with grissini, bread, or chicken wings.






Peaches and Honey Toast with Black & White Cheese

Ingredients:

  • 1 pack bread, slice
  • 4 TB extra olive oil
  • 3 cloves freshly minced garlic
  • 1 large or 2 small peaches, peeled and sliced
  • 1 pack Rosalie Black & White Cheese, slice
  • 6 TB pure honey


Instructions:

  1. Preheat the oven or toaster oven to 190C. Line a large baking sheet with foil and set aside.
  2. In a small bowl, combine olive oil and minced garlic. Brush garlic oil mixture over the bread, and place slices in a single layer on a baking sheet. Bake for 6-7 minutes, until light golden brown.
  3. Arrange peach slices over each slice of toast. Add cheese over each bread. Bake 5-7 minutes until the cheese is nice and melty.
  4. Drizzle with honey. Enjoy warm!






Strawberry Cheesecake (No Baked)

Here’s a perfect dessert for a get-together with your family or loved ones. This is a no-bake version of cheesecake in a glass with fresh strawberry compote. Have fun with different flavors and toppings, too!


Ingredients:

  • 8 pcs Rosalie Gluten-Free Cheese Choco Cookies
  • 1 tbsp Melted Butter
  • 50 ml Milk
  • 150 g Cream Cheese
  • 50 g Yogurt
  • Fresh Strawberries
  • 1 tbsp Sugar
  • 1 cup Water


Instructions:

Cookie Crumbs (Base) :

Crush the Rosalie Gluten-Free Cookies (8 pcs) into crumbs, and mix in the (1 tbsp) melted butter. Use a splash of milk if you need to form a crumbly mixture. Add to the bottom of the glass.


No-Bake Cheesecake:

Mix (150 g ) Cream Cheese & (50 g) Yogurt until smooth, and add (50 ml) milk until it’s a creamy texture. Taste & adjust as you’d like. Add to the glass over the cookie crumbles.


Strawberry Compote (Top) :

  1. Add fresh strawberries, sugar & water to a medium saucepan. Stir to combine and cook over medium heat for 10-15 minutes, stirring occasionally
  2. Repeat with one more of each layer. Place in the fridge until ready to eat. Enjoy!

Ingredients:

  • 150 g whole wheat flour
  • 150 g wheat flour
  • 300 grams of carrots
  • 4 eggs
  • 10 dates
  • 10 g baking powder
  • 2 bananas
  • 1 tsp cacao powder
  • 1/2 tsp salt
  • Some butter for greasing


Frosting:

  • 50 grams of goat cheese
  • 50 grams of cream cheese
  • 2 tbsp of honey
  • 1/2 lemon


How to make :

  1. Preheat the oven to 180 degrees.
  2. Soak the dates in a bowl of boiling (or warm) water.
  3. Meanwhile, peel and finely grate the carrots. Set aside
  4. Take a cake tin and grease it with some butter. Tear a piece of baking paper to the size of the baking tin and place it in the baking tin to make it easier to unload the cake after baking.
  5. Mix together the whole wheat flour, flour, baking powder, salt and cocoa powder and set aside.
  6. Deseed the dates and blend them together with some of the well water. Then add the bananas in pieces and blend together until sticky, set aside.
  7. Beat the eggs until fluffy in a mixing bowl. Add the banana date mixture and mix until everything is combined.
  8. Add the flour mixture to the wet mixture bit by bit and carefully fold it in. When all dry ingredients have been added, add the carrot and fold it into the batter.
  9. Spoon the mixture into the cake tin and bake for around 60 minutes until ready. Check if it is ready by pricking the cake with a wooden stick.
  10. When it comes out dry, it is ready. If there is wet batter on the stick,put it back in the oven for another 5/10 minutes until the stick comes out dry. Let it fully cool down on a wire rack.
  11. Frosting
  12. While the cake is cooling, the frosting can be made. To do this, whisk the goat cheese, cream cheese and two large teaspoons of honey. Add about 2 to 3 large tablespoons of lemon juice and whisk together. Place the frosting in the refrigerator until the cake has cooled. When the cake has cooled, the frosting can be spread on top. For extra flavor, add lemon zest, raisins and an extra teaspoon of honey. Enjoy, a nutritious yet delicious snack. Best of both worlds!

The goat cheese pairs perfectly with the sweet corn and spicy pepper. Give it a try!


Ingredients:

  • 180 grams Sweet Corn
  • 30 grams Black pepper goat cheese
  • 50 grams Spring Onion (finely chopped)
  • 1 Egg
  • 40 grams Milk
  • 90 grams Flour
  • Pinch of salt
  • Oil (for frying)


Instructions:

  1. Prepare all the ingredients: cut the corn from the cob, the spring onion finely and the cheese into small cubes. Weigh the flour and milk and set aside.
  2. In a mixing bowl, mix together the egg, flour and milk to form a smooth batter. To this, add a pinch of salt, the corn and spring onion, and mix together until everything is well distributed.
  3. Heat a pan over medium-high heat. Add a dash of oil, and once the oil is hot add a scoop of batter using two spoons. Form a circle with your spoons and press the batter against the bottom of the pan.
  4. Fry both sides for about 2/3 minutes until the bottom is golden brown.
  5. Serve with some extra spring onion, cheese and tomato. Top tip: You can double this recipe and make a big batch ahead.
  6. Store them in the refrigerator and heat them in the pan for a few minutes before you want to eat them. That way you can enjoy this tasty snack whenever you want to!

  • Two eggs
  • Fresh goat cheese; Chevre
  • Sourdough, toasted
  • Cashew nuts, finely chopped
  • Fresh parsley & dill, finely chopped
  • Olive oil
  • Salt & black pepper


How to make :

  1. Boil eggs over medium-high heat (cook for 7 minutes)
  2. Transfer them to a bowl with ice water (for 3-4 minutes) and gently peel eggs;
  3. Make a topping by stirring cashew nuts, parsley, dill, olive oil, and fresh goat cheese, Chevre;
  4. Then top the toast with eggs, then smash with a fork; season with salt and black pepper;
  5. Drizzle prepared topping over the top and serve it!

  • 3 ripe bananas, mashed!
  • 300 gr flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 120 gr unsalted butter, melted
  • 200 gr sugar
  • 1 egg + 1 egg yolk
  • 50 gr Rosalie Chevre
  • 1 tsp Vanilla
  • 150 gr Choco chips


How to make:

  1. Preheat the oven to 175°C. Grease a pan with butter and line with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. In another large bowl, mix together melted butter, sugar, egg and egg yolk, Rosalie Chevre, and vanilla.
  4. Add mashed bananas and stir until combined.
  5. Gradually add dry ingredients to wet ingredients until just combined with spatula.
  6. Fold in chocolate chips and transfer to the prepared pan.
  7. Baked at 175 degrees celsius for 50 mins.
  8. Let cool for 10 minutes in a pan, then turn out onto a cooling rack to cool completely.

How to make:

  7. After baking it, add 1 cup of spinach on top of 120 gr beef ham, 60 gr Rosalie Chevre
  8. Pour the egg mixture on top. Also, add cheddar for topping!

  2. Blend Chevre, Honey, and Cinnamon in a bowl
  3. Coat each date with melted milk or white chocolate and crush pecans nuts

Ingredients :

  • Butternut squash
  • Olive oil
  • Black pepper
  • Salt
  • Rosalie Black Garlic Vanilla Butter
  • Fresh parsley


Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Discard the seeds from the squash and slice about 1,5 cm thick.
  3. In a mixing bowl, combine the slices with a tablespoon of olive oil, and season with salt and black pepper.
  4. Toss it together until all the pieces are evenly coated.
  5. Place the slices on an oiled baking tray and bake for 20 minutes.
  6. While the squash is baking, finely chop some fresh parsley.
  7. After 20 minutes, flip the slices upside down and coat them generously with the Black Garlic Vanilla Butter.
  8. Put it back in the oven for another 5/10 minutes, until the slices are caramelized and soft from the inside.
  9. Garnish with an extra spoon of butter and some fresh parsley. Enjoy!

  • Puff Pastry Sheet
  • 100 ml Whipping Cream
  • 140 ml Milk
  • 50 gr Sugar

  • 1 tbsp Cornstarch
  • 50 gr Chevre
  • Egg Yolk Brush


How to make:

  1. Cut the puff pastry. For this recipe, you'll use a mini muffin tin. Then cut out your store-bought puffed pastry with a small cookie cutter then fill with nuts.
  2. Bake at 200 degrees Celsius for 20 mins

How to make:

  1. Combine parsley, thyme, Rosalie Chevre (goat cheese), and grated garlic.
  2. Cut a slit in each chicken breast to form a pocket; fill it with the mixture.

Are you a true cheese lover? Then you already know how well a good goat cheese goes with honey and fruits like fig or pear. For those of you who are still learning the ways of eating cheese, here is an easy and very tasteful recipe of a cheesy tartine!


Grill your slice of bread in a toaster or in the oven for a few minutes. When the bread is a little toasted, add goat cheese, like Rosalie Cheese's Milton, cut in slices, then shredded almonds and put it back in the oven for a couple of minutes. When the cheese is just a little melted and brownish on the sides, take it out of the oven and add slices of fig or pear. Finally, add a drizzle of honey and sprinkle some extra fresh thyme if you wish. To perfectly finish your dish, place your tartine on a plate along some green salad or rocket salad.


If you're not much into fruits, you can just add honey and fresh herbs on your hot goat cheese!

  1. Here’s the easy way:
  2. Unwrap the cheese;
  3. Place the cheese in a small baking pot
  4. Score a deep cross or a crosshatch pattern on the top rind
  5. Insert the leaves of a sprig of rosemary into the gaps.
  6. Bake for 12-15 minutes (180°C)

  1. Cut the banana into slices. Tip: cut at a diagonal angle for a bigger area to caramelize.
  2. Heat a pan on medium heat.
  3. When the pan is hot, add a generous spoonful of butter and let it melt.
  4. When the butter is melted add the banana slices and fry until golden brown.
  5. Then turn them over one by one and add an extra spoonful of butter.
  6. Fry this side golden brown as well while spooning the melted butter over the slices.
  7. Place the banana on a plate and serve with grated coconut.

Ingredients:

  • 500 gr starchy potatoes, about 4 medium potatoes
  • 2,5 tbsp castor sugar
  • 5 tbsp rice flour
  • 90 gr cheddar cheese
  • 2 tbsp oil, for frying


Instructions:

  1. Bring a pan of water to a boil. Meanwhile, peel and dice the potatoes.
  2. When the water boils, add 2 tsp salt and the diced potatoes. Bring to a boil, and boil until the potatoes are soft.
  3. You can check this by pricking them with a fork. You should be able to poke into them easily without pushing too hard. This usually takes between 5/10 minutes.
  4. Meanwhile, finely grate your block of cheddar.
  5. Drain the potatoes when they are soft and put them in a mixing bowl. Mash the potatoes with a fork, spoon or stick.
  6. Add the sugar and mix well. (Sugar creates a nice caramelized layer after frying).
  7. Add the rice flour and mix well. (Rice flour provides a crispy crust after frying.)
  8. Sprinkle a cutting board and your hands with a little extra flour. Take 1/8th of the dough in your hand and form a ball and press it flat.
  9. Add 1/8th cheese in the center and fold the sides around the cheese so that all the cheese is enclosed.
  10. Carefully roll it back into a ball and press it flat. Place the pancake on the cutting board and repeat to make 8 pancakes.
  11. Heat a pan over medium-high heat. When the pan is hot, add 1 tsp oil. Carefully place pancakes in pan and gently press down.
  12. Fry pancakes for about 5 minutes until golden brown. Flip them over and then fry the other side for 5 minutes until golden brown.
  13. Heat a pan over medium-high heat. When the pan is hot, add 1 tsp oil. Carefully place pancakes in the pan and gently press down. Fry pancakes for about 5 minutes until golden brown.
  14. Flip them over and then fry the other side for 5 minutes until golden brown. Remove the pancakes from the pan and drain on kitchen paper. Repeat for all pancakes. ENJOY!

Ingredients:

  • 3 large eggs
  • A pinch of salt
  • A pinch of pepper
  • Rosalie Grated Cheddar Cheese
  • Bodhita (Rosalie's Blue Cheese)
  • Rosalie Herbs Butter
  • 1 tbsp leek, chopped
  • Sourdough bread
  • 3 mushrooms
  • 1 pack cherry tomato
  • 1 tbsp olive oil


How to Make:

  1. ​​​​​Sauté mushrooms and cherry tomato in olive oil. Set aside.
  2. Spread herbs butter on the sourdough bread, both sides. Toast the bread on a pan. Set aside.
  3. In a pot, break 3 eggs and add herbs butter. Beat the eggs in a minute. Turn on the heat and stir it gently. Whiles, lift off from the heat then put it back, do it 2-3 times.
  4. Add salt, pepper, and chopped leek to the pot. Last, add Bodhita for extra kick. Stir again just for a minute and turn off the heat. Set aside.
  5. On a plate, put mushrooms, cherry tomato, and sourdough bread. Drizzle a little bit olive oil, then put the scramble egg on the bread. Enjoy!

Ingredients:

  • 2 pieces of bread
  • 150 ml full cream milk
  • 1 tbsp creamy yogurt
  • 1 pc egg yolk
  • 1 tbsp Vanilla Black Garlic Butter
  • 1 tbsp Palm Sugar
  • 20 gr Cheddar & Mozzarella
  • Pinch of salt


Instructions:

  1. In a non-stick pan, mix the milk, eggs, palm sugar , cheddar cheese & mozzarella cheese on low heat. Stir until the cheese melt.
  2. Pour in the vanilla black garlic butter, cornstarch and creamy yogurt to the mixture and continue stirring until the liquid thickens.
  3. Spread the cheese mixture and extra cheese on the top of the bread.
  4. Place them inside the oven. Bake at 180°C for 10 to 15 minutes or until the cheese becomes golden brown
  5. Hurry up and eat while it is hot, it tastes better when it is hot. Enjoy!

Cheese Spring Roll

Ingredients:

  •  Springroll sheets
  • Cheddar
  • Sugar
  • Plain flour

Instructions:

  1. Mix a few spoonfuls of flour with some water until a creamy sticky mixture forms and set aside.
  2. Cut the cheddar into strips
  3. Place a strip of cheddar on a spring roll sheet and sprinkle some sugar on top. Fold the sheet around the cheese strip and seal the ends with a little bit of the flour mixture.
  4. Choose the option to deep fry or use the airfryer

For deep frying:

  1. Heat a pan with a layer of oil which comes to at least half of the rolls thickness. When the oil is hot, carefully place the rolls in the oil and fry until golden brown. Turn them over one by one, and fry the other side until golden brown. When they are done, drain them on kitchen paper.

For the airfryer:

  1. Preheat the airfryer to 175 degrees celsius. Grease the rolls with some oil and place them in the airfryer. Bake for 5-8 minutes until the layer is crispy and drain them on kitchen paper before serving.

How to Make:

  1. On a pan, heat Rosalie Herbs Butter, then add the onion.
  2. Add the chopped Tuna, then sprinkle with salt and pepper.

Fried Halloumi with Lemon n Honey

Halloumi is a salty cheese so the combination of sweet sticky honey and the acidity of lemon juice is a flavor bomb with every bite. Give it a try!


Ingredients:

  • 200 g Rosalie halloumi cheese
  • 3 tablespoon honey
  • 1/2 lemon
  • Herbs ( dried thyme, dill & parsley)
  • 2-3 tablespoon olive oil


Instructions:

  1. Slice halloumi in 1 centimeter thick pieces
  2. In a small bowl, add the olive oil, juice of the lemon and herbs. Mix well.
  3. Add one layer of halloumi slices to an air tight container. Spoon over a layer of the lemon dressing.
  4. Add another layer of halloumi on top, add dressing , repeating until all the cheese has been added. Pour over any remaining dressing.
  5. Every now and then, turn container upside down so dressing can marinate and coat the cheese on all sides.
  6. Heat some of the olive oil in a pan on medium heat. One heated, gently place some of the halloumi cheese. Don't overcrowd the pan or have pieces touching.
  7. After 2-3 minutes when you have a nice sear, turn the cheese around. After 1 minute, add a few spoons of the dressing to glaze the cheese.
  8. Once the second side has seared, remove from the pan and add to a plate. Keep repeating this process until all cheese is cooked
  9. Upon serving, add a few more spoons of the dressing & drizzle with honey to coat the cheese, and enjoy!

Ingredients:

  • Cherry Tomato
  • Rosalie’s Halloumi
  • Chimicurri
  • ¼ cup finely chopped parsley
  • 1 tbsp chilli flakes
  • 3-4 garlic cloves finely chopped
  • 1 red pepper, finely chopped
  • 2 tbsp oregano
  • ½ cup vinegar
  • ¾ cup extra-virgin olive oil

  1. Combine parsley, chilli flakes, garlic, red pepper, oregano. Using a fork, whisk in vinegar and extra-virgin olive oil. Set a side, reserve as sauce.
  2. Cut the halloumi into two.
  3. Preheat the pan over medium-high heat. Once hot, add olive oil, place the halloumi on the pan. 
  4. Flip each slice after about 3 minutes, grill on the other side then remove from the pan.
  5. Place the grilled halloumi on a plate. Spoon reserved chimichurri over the grilled halloumi, add fried cherry tomato. Enjoy!

For you, the cheese lover at home! Here is an easy recipe of halloumi nuggets, you can try at home. These homemade halloumi nuggets are dipped in Panko breadcrumbs for an crispy finish. Dunk the Halloumi nuggets into a marinara sauce for great taste!


Ingredients:

  • 500 gr halloumi cheese, cut into large bite sized cubes
  • 100 gr all purpose flour
  • 1 large egg, beaten
  • 115 gr panko bread crumbs
  • Salt and pepper, to taste
  • Basil leaves, fry 4-6 seconds


How to Make Halloumi Nugget?

  1. Dredge cubes of halloumi into the flour, followed by the beaten eggs and finally the breadcrumbs.
  2. Transfer prepared nuggets to a baking sheet lined with a cooling rack.
  3. Pour oil into a large skillet and preheat.
  4. In batches, carefully add piece to the oil and fry for about 3 minutes on each side, until golden brown.
  5. Transfer all halloumi nuggets to a platter, garnish with fried basil and serve with marinara sauce.


For Marinara Sauce:

  • 400g Chopped Tomatoes
  • 1/4 medium Onion, finely diced
  • 1 clove of Garlic, finely diced
  • 1 tbsp Balsamic Vinegar
  • 1/2 tsp Dried Basil
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Sugar, or to taste
  • Salt & Pepper, to taste
  • Oil, for frying
  • Chilli Flakes (optional)


How to Make Marinara Sauce?

  1. Heat up a little oil, fry your onions over medium heat. Add your garlic and fry until it begins to brown.
  2. Pour in your tomatoes and balsamic vinegar and bring to a simmer.
  3. Add in your basil, oregano, sugar, chilli flakes and salt & pepper (to taste) and stir to combine.
  4. Simmer for a good 10-15 mins until the sauce has thickened, stirring occasionally.
