Healthy Carrot Banana Cake Goat Cheese Frosting

Ingredients:
• 150 g whole wheat flour
• 150 g wheat flour
• 300 grams of carrots
• 4 eggs
• 10 dates
• 10 g baking powder
• 2 bananas
• 1 tsp cacao powder
• 1/2 tsp salt
• Some butter for greasing
Frosting:
• 50 grams of goat cheese
• 50 grams of cream cheese
• 2 tbsp of honey
• 1/2 lemon
How to make :
1. Preheat the oven to 180 degrees.
2. Soak the dates in a bowl of boiling (or warm) water.
3. Meanwhile, peel and finely grate the carrots. Set aside
4. Take a cake tin and grease it with some butter. Tear a piece of baking paper to the size of the baking tin and place it in the baking tin to make it easier to unload the cake after baking.
5. Mix together the whole wheat flour, flour, baking powder, salt and cocoa powder and set aside.
6. Deseed the dates and blend them together with some of the well water. Then add the bananas in pieces and blend together until sticky, set aside.
7. Beat the eggs until fluffy in a mixing bowl. Add the banana date mixture and mix until everything is combined.
8. Add the flour mixture to the wet mixture bit by bit and carefully fold it in. When all dry ingredients have been added, add the carrot and fold it into the batter.
9. Spoon the mixture into the cake tin and bake for around 60 minutes until ready. Check if it is ready by pricking the cake with a wooden stick.
10. When it comes out dry, it is ready. If there is wet batter on the stick,put it back in the oven for another 5/10 minutes until the stick comes out dry. Let it fully cool down on a wire rack.
Frosting
While the cake is cooling, the frosting can be made. To do this, whisk the goat cheese, cream cheese and two large teaspoons of honey. Add about 2 to 3 large tablespoons of lemon juice and whisk together. Place the frosting in the refrigerator until the cake has cooled. When the cake has cooled, the frosting can be spread on top. For extra flavor, add lemon zest, raisins and an extra teaspoon of honey. Enjoy, a nutritious yet delicious snack. Best of both worlds!
